Chocolate Chip Cookies
Ingredients
1 cup (2 sticks) unsalted butter, softened
3/4 cup granulated sugar
3/4 cup brown sugar, packed
2 large eggs
1 teaspoon pure vanilla extract
2 1/4 cups gluten-free all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups gluten-free chocolate chips
Directions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
Beat in the eggs, one at a time, and stir in the vanilla extract.
In a separate bowl, whisk together the gluten-free all-purpose flour, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Fold in the gluten-free chocolate chips.
Drop rounded tablespoons of cookie dough onto an ungreased baking sheet.
Bake for 10-12 minutes, or until the edges are golden brown.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
